Roast Duck

duck
3-4 citrus fruits, such as Meyer lemons or oranges
rosemary
sea salt

Preheat the oven to 375. Spray a 9x13 pan with nonstick spray, place a metal rack (roasting rack, toaster oven rack on top of its broiler pan, or small cooling rack- the goal is to lift the duck out of the duck fat that accumulates during the roasting) in the pan, and spray well with Pam. Empty the innards out of the duck and save for stock.

Cut the rinds off the fruit and cut in halves or thirds. Sprinkle with dried rosemary. Breast up, stuff the cavity with the fruit. If you are using fresh rosemary rather than dried, stuff the sprigs of rosemary in with the fruit rather than chopping and sprinkling on the fruit.

Cut slits in the skin of the breasts to allow the fat to drain and the skin to get crispy. Be careful not to slice into the meat. Spread a generous amount of salt on the skin. Roast in the oven for about an hour, or until the skin is browning and getting crispy. Turn the oven off until ready to carve, leaving the duck in the oven after pouring off the fat, and use the duck fat to fry up potatoes or veggies. Don't cover the duck as that will soften the skin.

One duck has two breasts and two drumsticks- 2 large servings or 4 small servings. They have much less meat than chickens. Serve the breasts with the skin on.

Guiso de Carne

Freir la carne vacuno picada en ajo tiras, pimienta, un poco de sal, en bastante aceite, hasta que la carne esté cocida (sin sangre). Agregar unas gotitas de salsa de soya a la fritura (opcional).
Saute the beef with garlic and a little salt in enough oil until the meat is cooked through. Add a few drops of soy sauce if desired.

Agregar cebolla picada en tiras, verduras congeladas, pimenton (preferencia rojo; rayar la mitad y picar tiras la otra mitad). Revolver bien con más sal.
Add onion cut in strips, frozen veggies, sliced potatoes, and bell pepper (save one half and slice the other). Stir well with more salt.

Agregar vino.
Add wine.

Dejar cocer a fuego lento sin que se pegue.
Cook under slow heat without burning.

Carbonada

carne de vacuno picada en cuadritos
cebolla en cuadritos

papas cuadritos
verduras congeladas (choclo, arrejas, zanahorias)

cubed beef or ground beef
diced onion
minced garlic
salt
frozen veggie mix (corn, peas, carrots)
rice

Freir carne de vacuno picada en cuadritos, cebolla en cuadritos, ajo y sal. No dejar que se queme la cebolla.
Fry cubed beef, onion, garlic. Salt. Don't let the onion burn.

Agregar papas en cuadritos y verduras congeladas.
Add cubed potatoes and frozen veggies.

Revolver y dejar que se inpegne todo.
Stir until completely mixed.

Agregar aqua a gusto. (2 a 3 tazas para 2 personas aproximadamente)
Add water to taste. (2 to 3 cups for 2 people approximately)

Agregar arroz una vez que el agua esté hirviendo.
Add rice and bring to boiling, and then stir once.

Retirar del fuego una vez que el arroz esté cocido.
Reduce the heat until the rice is cooked.


Lentejas/ Lentils

Monica adds ground beef (omit for vegetarian), Better than Bouillon beef base (use vegetable broth for vegetarian), butternut squash, and potato.

Freir cebolla, ajo y oregano.
Saute diced onion, minced garlic, and oregano.

Picar pimiento y freir tambien.
Dice bell pepper and saute also.

Rallar zanahoria and agregar a la fritura.
Grate carrots and mix into the saute.

Agregar agua fria (un poco mas del doble de la cantidad de lentejas).
Add cold water (a little more than double the amount of lentils).

Revolver.
Agregar lentejas lavadas.
Add rinsed lentils.

Agregar arroz.
Add uncooked rice.

Dejar hervir por 30 minutos.
Boil for 30 minutes.

Agregar sal y aceite a gusto.
Add salt and oil to taste.

Monica's method:
Saute diced onion, minced garlic, and oregano. Add ground beef, and cook. Add diced bell pepper and grated carrot. Add cold water and rinsed lentils. Bring to a boil, and add rice and diced butternut squash. Set timer for 30 minutes. Add diced potatoes and soup base at 20 minutes. If you want the butternut squash to keep their shape rather than mixing in, add with the potatoes. Add salt and oil to taste.

Serve with croutons.

Croutons:
Chunk French bread and fry with oil.

To eat leftovers, fry an egg, and eat on top of reheated lentils.

Sopaipillas

Ingredientes:
4 tazas de harina - 4 cups of flour
1/4 cuchara de te bicarbonato - 1/4 teaspoon of baking soda
1/4 taza aceite - 1/4 cup oil
3/4 cuchara grande sal - 3/4 tablespoon salt
1/2 tarro chico zapallo - 8oz. can of pumpkin
1 cuchara grande levadura - 1 tablespoon of yeast

Preparacion:

Poner el zapallo en un bowl con agua y calentarlo en el microondas.
Put the pumpkin in a bowl with a small amount of water, and heat it in the microwave for 1 minute 30 seconds.

Por mano/ by hand:
Apilar la harina y hacer un hueco en el medio. Agregar zapallo, sal, levadura, bicarbonato, y aceite.
Make a pile with the flour and knead the pumpkin, salt, yeast, baking soda, and oil into the flour.

With electric mixer:
Mix pumpkin, salt, yeast, baking soda, oil, and flour together.

Cortar en pequenos trozos. Hacer sopaipillas (redondear los trozos de masa).
Cut into small pieces. Make sopaipillas by rolling into balls and flattening.

Monica's method: Roll out dough with rolling pin and cut out with a biscuit cutter or plastic lid.

Dejar liudar unos minutos.
Let rise a few minutes.

Freir.
Fry in hot oil.

Servir caliente!
Serve hot!
