Kale and White Bean Soup

a bunch or a bag of kale, cut into bite size pieces with the stems and ribs removed
2 15-oz cans of white beans
finely diced onion
minced garlic
chicken or vegetable broth
salt and pepper

Saute onion and garlic in a small amount of broth. Add remaining ingredients and cook until the kale is soft. Add salt and a generous amount of pepper. Can add cubed or shredded chicken breast. Top with Parmesan cheese if desired.

Kale Salad

a bunch of kale
2-3 lemons
1/8 cup balsamic vinegar
olive oil
salt
additional toppings: Parmesan cheese, toasted nuts, Craisins, avocado, shredded carrots, honey, bacon

Remove ribs from kale and cut into bite sized pieces. Squeeze the juice of the lemons over the kale and add the balsamic vinegar. Massage into the kale, mixing well. Allow to sit for 10-20 minutes. Taste to ensure the kale has been "cooked," and the bitterness removed. If not, add more acid, and massage again. Add a generous amount of olive oil and salt to taste.

Sauteed Kale (or other greens)

1 bunch kale (or other greens- mustard, bok choi, etc.)
garlic
butter

Melt butter, saute minced garlic, and saute greens. Eat. Mmmm.
